Warm Candied Yam Salad

Ingredients:

2 Yams 2-3 Tbsp Olive Oil ¼ cup Walnuts, crushed ½ White Onion 1 Tbsp Soya Sauce 1 Tbsp Cane or Brown sugar

Instructions:

1. Cut up yams into 1 inch by 1 inch cubes. Toss in 2-3 Tbsp. of olive oil. Coat thoroughly and put onto greased cookie sheet. 2. Bake at 425 degrees for 22-25 minutes or until fork is easy inserted. 3. Meanwhile, saute onions for 7-8 minutes, then add soya sauce and sugar and stir for an additional 2 minutes or until onions are fully cooked. 4. Take off burner and add crushed walnuts. Stir.  Let cool for 5 minutes and then add to yams to mixture, coat and serve.

Note: Double the recipe and you’ll have a great dish to bring to a friend’s house!
