Ingredients:
1 ¼ Cup Brown Rice Flour
½ Cup Potato Starch (or Flour)
½ Cup Almond Flour
1 Tsp. Cinnamon
1-2 Tsp. Ground Ginger
½ Tsp. Nutmeg
½ Tsp. Salt
½ Tsp. Baking Soda
½ Tsp. Guar Gum
¼ Cup Molasses
¼ Cup Rogers Cane Sugar (Liquid)
¼ Cup Confectioners’ Sugar
¼ Cup Butter (Softened)
1 Tsp. Vanilla
2 Eggs
Directions:
1. Preheat oven to 350 Degrees 2. Sift all dry ingredients except confectioners’ sugar 3. In a separate bowl, cream confectioners’ sugar and butter together until fluffy. 4 . Add molasses, liquid sugar, vanilla and eggs. Beat until smooth. 5 . Add dry mixture to wet a ¼ cup at a time until fully mixed in. 6 .Roll out dough, using a bit of rice flour and use gingerbread cookie cutter to shape cookies. 7. Bake 10-12 minutes until cookies are lightly browned. 8. Decorate with your choice of icing and toppings!
