Blueberry Almond Oat Muffins (Low Sugar and Wheat Free)

Soak 1 cup quick oats in 1 cup almond milk (10 mins)

Beat together: ¼ cup butter ¼ cup brown sugar or cane sugar 2 tsp vanilla 2 tbsp agave or honey 2 eggs Optional: 1-2 packets of Stevia

Whisk together: 1 cup brown/white rice flour 2 tsp baking powder ½ tsp baking soda ¼ tsp salt ¼ tsp guar gum 1 tsp cinnamon

Add: 1 cup blueberries or raspberries ¼ cup blanched almonds Optional: 2 tbsp dried coconut

Directions: 1.Preheat oven to 400 Degrees 2. Beat together wet ingredients and then add oats to mixture. 3. Add to dry mixture. 4. Add blueberries, almonds and coconut. 5. Bake for 18-20 minutes.

*Makes 12 muffins
